LEMON PUDDING CAKE - Brenda's recipe

1/3 cup sugar
2 TBSP honey
1 large egg
1-1/2 TBSP Butter
2 TBSP Flour
3/4 cups Skim Milk
cup well shaken buttermilk or plain yogurt
cup fresh lemon juice
3 large egg whites

Preheat oven to 350, Spray (2) 8 inch glass pie dishes w/ cooking spray, dust w/ sugar. Beat sugar, honey, egg & utter medium speed 2 minutes Add flour & beat until smooth Add milk, buttermilk & lemon juice, beat until combined In another bowl beat egg whites w/ pinch of salt until soft peaks (2 min.) Stir 1/3 of egg whites into batter then gently fold in rest Spoon batter into prepared pie dish & place in baking pan w/ hot water way up side.

Bake 30 min.
